The perfect two egg cheese omelette.

Kia ora Chef,

I thought now might be a good idea to share my omelette making tips with you. This omelette feeds one person and takes about 5 minutes to prepare. I have shared some step by step pics below, plus a bonus 'slow-mo flipping vid' if your feeling confident enough to take on a next level challenge. Enjoy!

Two egg, cheese omelette.

1. Find a small frying pan [I have a pan at home just for, $7 at Briscoes].
2. Heat 2 teaspoons of cooking oil to a medium-high heat.
3. Crack two eggs into a bowl and add 1 tablespoon of water. Beat with a fork.
4. Pour the egg mixture into the pan and swirl gently a few times. 
5. Make some pockets with a rubber scraper or spatula, tilt the pan a little and fill with egg. Cook for no more than 1 minute.

Cooking Method One:

6. Place a similar-sized plate over the pan and cook for 30 seconds. Remove the plate using a teatowel. 
7. Add slices of cheese to half of the omelette, fold in half and slide onto a plate.
8. Season with salt.

Cooking Method Two:

6. Lift the pan off the heat and tilt on an angle downwards
7. Allow the omelette to slide briefly before quickly flicking your wrist upwards.
8. Add cheese to half side and use the spatula to fold the omelette in half. Cook for 30 seconds, then slide onto a plate.
9. Season with salt.
